Management  Workshop- 25th Feb 2010 for the students of the VIII Semester 

French Workshop

Ms. Geraldine Cirot, a French lecturer  from France,  conducted a  workshop for the students of the IV Semester. She explained the significance of French gastronomy and the finer nuances of French cooking.  She also presented the different French specialities from various regions of France and the formal dining etiquettes prevelant in France.

Ikebana Workshop

Ms Bhargavi Stayan , conducted a workshop on "Ikebana " for the students specializing in  Housekeeping on 4th March 2009.

A workshop on "Dining Ettiquette " was held for the VIII Semester students where Mr Sandeep Chatterjee , Sr Lecturer , MS Ramaiah College of Hotel Management conducted the session.  In the Training Restauarant,  the participants were served ( by the juniors ) an elaborate Continental menu prepared by  the students specializing in Food Production.

Instructions were given on table manners and how to handle their tableware when eating dishes with ingredients like olives and , spaghetti .Their meal was complimented by a sparkling beverage . They  enjoyed the meal and  were assisted by the faculty of the Food and Beverage Service Departemnt.

The students specializing in Food and Beverage Service were taken through a two day workshop  on 3rd and 4th March 2009. 

Mr Kevin Wilkins , Assistant Food and Beverage Manager, Ista, Bangalore conducted the introductory session on "Cost Control in the Food and Beverage Service  Department."  

 The Associate Manager , Food and Beverage Service of  The Park , Bangalore , Mr. Kumar Manish did a presentation on "Restaurant Operations" including the Profit and Loss  Statements and their impact on Restaurant Operations.

"Menu Pricing Strategies" was explained to the students by Mr Nilesh Singh, Asst. Food and Beverage Manager , The Oberoi, Bangalore. 

Mr Danny D'sylva, Executive Bartender, The Chancery Pavilion, Bangalore who has been awarded the "Best Bartender " in Bangalore gave the students practical tips on Modern Bartending.

The accommodation team of M.S.Ramaiah College of Hotel Management organized a two day workshop on “Aspects of Accommodation Management” at the college premises on the 24th & 25th of February 2009.

The workshop for organized for the final year students. Experts from the industry were invited to address the students and share their experience. Topics ranged from current scenario in the hospitality industry to the actual practical aspects.

The students benefited greatly from the interaction with the resource persons.

  1. Ms Pranjali Sagare – Asst.  Front Office Manager Leela Kempinski, Bangalore.

Ms.  Sagare spoke to the students about “Manpower Planning” in the Front Office Department of a five star hotel. She also addressed students’ queries regarding guest to employee ratio and accurate calculations of staffing based on different parameters.

  1. Mr. Suresh Khanna – Front Office Manager , Taj Residency, Bangalore.

Mr. Khanna spoke on Global Distribution Systems and its current applications.

He also spoke about the limitations of traditional reservation systems and how the GDS has minimized errors and improved efficiency in the hospitality market.

  1. Mr. Vikram Falodia – Front Office Manager, ITC Windsor, Bengaluru

         Mr. Falodia addressed the complex topic of budgeting for the accommodation department, the constraints involved      in  the budget and the role of the key staff in it.

  1. Mr. Santosh B.A Manmachine  (India) Private Ltd.

Mr Santosh gave a wonderful demonstration of the equipments manufactured by the renowned German company – K’A’RCHER.  The practical demonstration of the equipments helped the students to have a better understanding of the labour and time saving devices available in the market.

  1. Mr.  A. Raviraj – Revenue & Accounts Manager of the Ivy Unwind Island

Mr. Raviraj spoke on building a powerful ‘Hospitality Brand’. He spoke extensively on the role sales & marketing department plays in building a brand. He also spoke on developing and retaining customers.

  1. Ms. Oindrella Bannerjee – Sales Head – Hotel Atria, Bangalore

Ms. Bannerjee addressed the students about the current business scenario and the effects of recession on it. She also spoke about the role of the sales & marketing team in meeting the constraints posed by global slow down.

  1. Mr. Jyothirmoy GhoshChrist College, Bangalore

Mr. Ghosh spoke on pricing and room rate fixation. She shared with the students and exercise on room tariff calculation using the Hubbart Formula.

The Department of Culinary Arts of MS Ramaiah College of Hotel Management orgamnised a two day workshop on 19th and 20th February 2009  for the students of the VIII Semester who are aspiring to be chefs.

Chef Mayur  Ramachandran , Sr Chef de Partie, is presently in charge of the Continental Section of the Mynt, Taj West End,  Bangalore. He  started the workshop by doing a presentation on  “ A Chef of Modern Times “    on The Current Trends in the Food Industry.  It included Molecular Gastronomy.  This will go a long way in closing the gap between academic input and industry development.

Chef Rana Domnic Glomes ,  Executive Chef, Royal Orchid Central, Bangalore  did a presentation on New World Cuisine.  He magically transformed a set of vegetables into a range of mouth watering delicious Arabic food like Falafelle. 

Chef Rajneesh Gandhi,  Executive Sous Chef , The Leela Kempinski, Bangalore who specializes in Contemporay Modern Cuisine   touched a chord in the students by speaking about things that mattered most to students who are on the threshold of a career.  He spoke with patience and described all the aspects of a Chef’s journey to the position he is in now. He also spoke about how A Chef should have a Business Sense.

 Chef Ravish Mishra ,  Sous Chef in The European Kitchen was truly exhibitted "Creativity"  in his plate presentations and  Chef Sandeep Raj, Sr Sous Chef , Bakery and Confectionery ,  ITC  Windsor Bangalore  proved that actions speak louder than words.  He said very little but the desserts that he presented were fabulous.  They both showed  exemplary team spirit.

The Management Department  organised a one day  wokshop on "Appreciative Enquiry and Team Building " for the students of the IV Semester .

Prof. Anita Singh, Senior Faculty , M. S. Ramaiah Institute of Technology conducted  the session on Appreciative Enquiry.  This programme paved the way for the students to "DISCOVER" themselves, "DREAM" about their future , "DESIGN" their path to fulfill dreams and reach their "DESTINY".

 Mr.  Prasana Kumar, Professor,  M.S.  Ramaiah College of Hotel Management conducted Team Building Exercises. This session helped the students to identify the uniqueness of their individual personalities and work as a team to achieve the common goal.

Ms Linda Daniel , Lecturer,  M.S.  Ramaiah College of Hotel Management co- ordinated the entire days' activities.

Bartending Workshop - was conducted by Tulleho on  17th February 2009 for the students of the VIII Semester .
